My hubby has finally agreed to give up meat, except fish. So, I get to make even more delicious, healthy meals, that don’t require me to cook a meat separate for him to add. Which, I actually stopped doing a while ago, anyways.
I don’t want the meat in the house. Plus, it’s way, way, way cheaper to eat vegetarian or vegan. Although, he will still eat seafood. I just won’t cook it that often. The thing is, that I need to come up with meals that are really, really filling.
That, means lots of healthy fats, protein and fiber. In comes my Avocado Chickpea Burgers. If, you top them with guacamole, spinach and a thick slice of tomato, they have even more protein, fiber and healthy fats. Then, there’s the delicious taste, and I wish I had room for two. Try them for your next BBQ, you’ll love them, meat eater or not.
Plus, avocado oil for cooking, and if possible to add garlic powder to the avocado oil when cooking to add a more delicious taste.
Combine all the burger ingredients in a food processor and process until fully combined. Divide into quarters and scoop out a quarter at a time. Then, patting them into four burger patties, placing them on wax paper and freezing them for at least 2 hours, to firm up. When you are ready to cook, just heat up about a tbsp or two of avocado oil in a frying pan, with about a tsp of garlic powder, if possible, to add more flavor. Cook the patties about 7 mins on each side, until a nice golden color. Serve immediately. Makes four burger patties. Enjoy!
