Easy Black Bean Nacho Bake

This is so easy and always a crowd pleaser!  The ingredients are usually in the pantry and refrigerator.  So, on nights when you want some healthy food that tastes like it’s not and hits the spot of hungry tummies, this will do it all!  It’s gluten free!  Dairy free and vegan if you use non-dairy cheese.  The leftovers are fantastic too!  I usually don't like things like nachos reheated, but these are delicious!!!  I found a delicious vegan cheese with jalapenos in it, that melted perfectly.  My husband didn’t even know it wasn’t real cheese.  The added spices made a big difference too.

Because the “meat” part of these nachos is black beans, there is a good serving of fiber.  Then, add the bell pepper, the salsa, and even some corn chips have a good amount of fiber to add.  When I get to eat a dish as good as this one, I don’t even miss eating cheese or dairy.

My hubby really likes this toppped with a bunch of slices of jalapeno peppers.  I like it with some avocado slices or guacamole.  It’s also good with sour cream or greek yogurt for extra protein, but since I’m not eating dairy anymore I can’t have those.  But, honestly, I like it just the way it is with a little bit of avocado, oh so good!

Ingredients

  • 2 cups corn chips
  • 15 oz can black beans, rinsed and drained
  • 10 oz salsa
  • 1 red bell pepper, chopped
  • 1 cup cheese, shredded if possible (I used vegan cheddar jalapeno cheese cube and sliced it)
  • ⅛ tsp each cumin, chili powder and black pepper
  • 1 tbsp avocado oil or red palm oil

Toppings

  • sliced avocado or guacamole
  • jalapenos

Directions

Preheat oven to 350 degrees.  Spray an 11 x 7 inch glass pan with avocado oil, then sprinkle in the corn chips spreading evenly as a crust.  Rinse the black beans and spread them evenly over the corn chips.  Chop the red pepper into slices and sprinkle over black beans.  Then, scoop the salsa on top of the black beans and spread out evenly.  Next, sprinkle the cheese.  Lastly, sprinkle the cumin, chili powder and black pepper over the top.  Then, cover with foil and bake about 20 - 25 minutes, or until the cheese is melted.  Makes six servings.  Enjoy!
