Mediterranean Nachos

I was craving potatoes and beans for a few weeks now, and my hubby was getting tired of my usual mexican type nachos made from either sauted potatoes or fries with black beans and guacamole.  So, I thought up a mediterranean inspired version of my potato nachos.

The spices and seasonings really sing in this dish, adding a depth of flavor that really makes a party in your mouth.  This dish is so easy to make, the majority of the time is just hanging out waiting for the fries to cook.

I wish I would have thought of this recipe years ago.  I’ll be adding this to my usual rotation now.  It’s so tasty, healthy and easy, it’s a win, win, win!  Try it out yourself, next time you want a new type of nacho dish.

Mediterranean Nachos

Ingredients

  • 1 bag of waffle fries (I used Alexia)
  • 15 oz chickpeas, rinsed and drained
  • 1 zucchini, squash or eggplant sliced (I used zucchini)
  • ¼ - ⅓ cup pines nuts
  • ranch, for drizzle (I used Follow Your Heart vegan ranch)
  • Sprinkling of each cumin, turmeric, parsley and basil
  • Avocado oil for cooking

Directions

Cook the fries as package instructions suggest.  Meanwhile, when the fries have only about 10 minutes left to cook, saute the zucchini in a pan over medium heat with avocado oil, flipping after about 5 minutes.  Once, the zucchini and fries are finished cooking, put two spoonfuls of fries on a plate.  Then, add two to three spoonfuls of chickpeas on top of the fries.  Top with the zucchini, and sprinkle with the seasonings and spices as desired.  Drizzle the ranch and sprinkle some pine nuts on top.  Makes four servings.  Enjoy!
