I don’t know what it is about apples and me lately, but I’m addicted to them.  I have one every day, either in a smoothie, or as my Energy Boosting Apple Snack, or just an apple straight up.  They are fantastic in so many ways.  Apples almost always make a recipe better, so why not add them to creamy, dreamy cheesecake?  And, make it healthy by turning it into a smoothie?

The answer of course is yes, and YES!  When you compare my Apple Cheesecake Smoothie to a traditional caramel apple cheesecake, my smoothie gets a gold star for nutrition.  Sadly the cheesecake has 40 grams of carbs and over 20 grams of fat, not the healthy kind either.

It is severely lacking in fiber, less than 2 grams and not even 6 grams of protein.  On the other hand, My Apple Cheesecake Smoothie has lots of protein and a healthy amount of fiber too!  It’s creamy, and sweet and tastes just like a slice apple cheesecake a la mode.  Try it out, your taste buds will thank you!

Apple Cheesecake Smoothie

Ingredients

  • 1 cup unsweetened coconut milk (or almond, soy, rice, flax, cashew or cow milk)
  • 2 scoops or 1/2 cup Vanilla Shaklee Life Energizing Shake mix 

    (or for vegan option use Vanilla Energizing Soy Protein)

  • ¼ cup applesauce (or you can use ½ an apple, cored, peeled and cooked)
  • 3 tbsp light cream cheese 

    (or for a vegan and dairy free option use vegan cream cheese, like Daiya)

  • 1 sheet gluten free graham cracker

  • ¼ tsp cinnamon (optional)
  • 4-5 ice cubes

Directions

Combine all ingredients in a blender and blend until smooth.  Makes one serving.  Enjoy!
