This snack is fantastic to have in the afternoon when you need a little pick me up, because everyone has days that are harder than others and this snack will help get you through it with lots of energy.  I also love this as breakfast, because it keeps me full with and gives me lots of energy to tackle the day ahead.  It has healthy carbs that give lots of energy.  Lots of protein and fiber to keep you full and your inner motor running.  As well as, a good dose of healthy fats to help your body run at top speed!  

For being under 200 calories this snack is bursting with protein and fiber!  The health benefits of apples are great, I could go on and on about them, but I won’t bore you with a long list.  I’ll just give you a few of the top ones.  Apples decrease your risk of cancer, type 2 diabetes and lower your cholesterol.  They also improve your immune system and assist in detoxing your liver.  The saying,  "An apple a day, keeps the doctor away," is quoted often for a reason.

When I say peanut butter, I’m talking about all natural 100% peanut butter.  Not the stuff that says natural on the labels, which have oils, sugar and other ingredients in them.  The only ingredient that should be listed in peanut butter, is peanuts.  At least in my opinion that’s all that should be in there.  If you want to add an additional sweetness that is already in this snack from the yummy apple, you could add some dark chocolate chips or dried cherries, cranberries or raisins, they are each a much healthier option.

Ingredients:

Toppings (Optional)

  • vegan chocolate chips
  • nuts
  • dried fruit

Directions

While you are chopping the apple, melt the peanut butter if needed.  Place apple pieces in a bowl, sprinkle with cinnamon and seeds then stir to coat the pieces.  Add the melted peanut butter and stir to fully combine all ingredients.  If using toppings, sprikle with toppings.  Makes one serving.  Enjoy!
