When I was little my favorite sandwich was peanut butter and strawberry jelly. I always loaded up the peanut butter, it was more of a peanut butter sandwich with a little jelly. As, I’ve gotten older I still enjoy one on occasion, but I like the ratio of peanut butter to jelly to be a little more even now. There is just something about pb&j sandwiches that bring you back to your childhood. They are the quintessential childhood sandwich.
Peanut butter is actually healthy for you, as long as it’s the all natural 100 percent peanut kind. Not the stuff that has added sugar and oils, the ingredients should just say peanuts. Unfortunately most, if not all, name brand peanut butters on the market today have trans fat in them. Even if it is not listed on the nutrition label if the ingredients say partially or hydrogenated oils, then there are trans fats in it. So stay clear of those at all costs, if you value your health even a little.
The 100 percent “peanut” peanut butter tastes better anyways. I did a blind taste test with my hubby and he preferred the true “peanut” peanut butter. Good new is that true peanut butter has a bunch of healthy fats, which help keep you feeling full longer. These healthy fats also benefit your heart health. Peanut butter helps prevent cardiovascular and coronary heart disease. It also reduces your chance of cancer and alzheimer's. There are plenty of other health benefits to peanut butter too.
Combine all ingredients in a blender and blend until smooth. Makes one serving. Enjoy!
