These taste like a bit sized pumpkin pie, with an added bonus of pecans and caramel. They are not the usual texture of a protein bite. They are a creamy smooth texture, just like pumpkin pie. I wasn’t lying when I said they were pumpkin pie bites.
It’s hard to believe that each bit is only 54 calories, a very nice bonus if I do say so myself. The day I decided to play around in the kitchen and make these, I really was just trying to use up my extra pureed pumpkin and man am I glad I created these. I mean pumpkin pie is good, but Caramel Filled Pecan Pumpkin Pie Bites. My mouth is watering just typing those words.
One of the great things about these bites is that they are much quicker to make than regular old pumpkin pie. Plus, they are much healthier, because they don’t have all that extra bad fat from the butter crust. They are also low in carbs, but that doesn’t mean they are lacking in flavor. The pecans add a delicious butteriness, and the caramel middle adds just enough extra sweetness to make these superb.
Combine the honey and 1 tbsp pecans and put in the freezer for 15 minutes to let it firm up. Combine the rest of the ingredients in a bowl and roll it into 8 balls, then press your thumb on the top center to make a small indent. Take the honey and pecan mixture out of the freezer and put small scoops in the indent on top of the balls. Store in refrigerator. Makes eight servings. Enjoy!
