I absolutely love, love, love blueberry pancakes!  It was one of my favorite Sunday morning rituals my hubby and I did when we were first married.  I still make blueberry pancakes now and then.  And the magic ingredient is always fresh blueberries.  The first time I made this recipe up and tried it, I was in shock.  I couldn’t believe I was able to make a smoothie taste just like blueberry pancakes, it’s crazy.  But, I did it, I really did.

You may know I no longer eat gluten, and have tried making a few gluten free pancakes.  Some have tasted good and others not so much.  So, since I have had luck making some of my favorite baked goods into smoothies.  I thought why not try to make blueberry pancakes into a smoothie.

It’s awesome!  The combination of all the ingredients make the perfect tasting blueberry pancake, in a quick and easy breakfast.  When, I’m in a hurry but want the taste of a fluffy blueberry pancake I whip up this smoothie in less than five minutes and I’m reminded of what those wonderful Sunday mornings tasted like.  Try it for yourself, you’ll be amazed too!

Combine all ingredients in a blender and blend until smooth.  Makes one serving.  Enjoy!
