Waldorf Chickpea Burgers

I love waldorf salads, but sometimes I want the taste of one, but I’m not in the mood for a salad.  Weird, I know.  I always eat salads and smoothies.  Although, I do love veggie burgers, but am getting a little bored with the same old same old, if you know what I mean.

Thus, my Waldorf Chickpea Burger was born.  Just so you know this burger is not meant for grilling, it’s made for the stove top.  If you want to grill it, then you will need to add an egg or two to the ingredients to hold it together better.  It works great on the stove top, but I can tell it will not hold up to the grill without some help from eggs.

This burger is great for the fall or even the winter.  And, of course the spring and summer are a yes, I mean it’s a burger.  The flavors remind me of the fall, but so does a waldorf salad.  I topped this burger with balsamic dressing, it was soooo good!  The perfect thing to change it up.  If you too like waldorf salads, or even if you don’t you should try this burger it’s so flavorful and unique!

Waldorf Chickpea Burgers

Ingredients

  • 1 can 15 oz chickpeas
  • 1 small apple, I used a gala
  • ¼ cup chopped pecans
  • ¼ cup dried cranberries (or cherries or raisins)
  • 2 tbsp dried basil
  • 1 tbsp avocado oil
  • ½ tsp black pepper
  • ½ tsp salt, pink himalayan

Directions

Rinse and drain chickpeas and pour into a medium size bowl.  Smash the chickpeas into a thick paste.  Core and finely chop the apple, (with or without skin, I left the skin on) and pour into bowl (It is very important that the ingredients are chopped very finely or the burgers will fall apart.)  And, in the rest of the ingredients and stir to combine.  Take a plate and cover it with wax paper.  Divide the mixture into four sections and scoop up each section and form into a patty, then place on the wax paper on the plate.   Put in the freezer for 1 to 2 hours, to help form the patties and make them more durable to cook.  Then, warm up a little bit of avocado oil in a pan over medium to high heat and cook the patties for 5 to 7 minutes or until it is heated thru and a golden brown, flip and cook for another 5 minutes.  (Do not grill this burger, unless you add in an egg!)  Makes four servings.  Enjoy!
