Blueberry-Lemon Scone Smoothie

The other day I saw a blueberry lemon scone and it looked so good.  Normally, I’m not a huge scone person, I’m more of a muffin person.  But, this scone just looked so good.  I thought to myself, I could make a smoothie inspired by this tasty looking scone and make it gluten free, dairy free and healthy.

So, I did and it was very easy too.  The trick to making sure the lemon seeds don’t end up in your smoothie, which by the way taste bitter.  Is to catch the juice and seeds in a small cup first.  Then, scoop out the seeds and add just the lemon juice to the smoothie...easy peasy.

By adding just a little bit of fresh lemon juice to this smoothie, it gives it a very refreshing taste that is unique and spring like.  And, by adding the oats to the smoothie it gives it a nice thickness that is not too thick, but just right.  So, when you are about to reach for a not so healthy scone, try whipping up this smoothie instead.  It will fill you up and give you lots of energy too!

Directions

Squeeze the juice from the lemon(s) in a small glass, to catch any seeds that might come out.  If any seeds come out, just take a spoon and scoop them out.  You don’t want to fish lemon seeds out of a blender, it’s not fun.  And you don't want to accidentally eat one, because they are bitter.  Combine all ingredients in a blender and blend until smooth.  Makes one serving.  Enjoy!
