I love pudding, but don’t want the dairy that is in it.  So, I tried making my own.  I probably could have just googled non-dairy pudding to find a recipe, but I wanted my pudding to be high in protein and have plenty of fiber.

Plus, I didn’t want it to have dates, which seem to be in every vegan dessert recipe that I find.  Or a lot of vegan recipes call for soaking cashews in water for a few hours and then overheating my food processor to get them to be creamy.  Neither option sounded like fun.

So, I grabbed my handy helper (Xander), and we tested out a made up recipe, that just so happened to turn out delicious.  After a few tweaks.  It only took a few minutes to whip up, which is a big bonus.  I kept the extras in the refrigerator for only a day, because between the two of us it didn’t last long being so yummy and healthy!  But, I’m sure it would last five to seven days in the refrigerator.  Try it out!

Ingredients

Optional Toppings

  • Dairy free and vegan chocolate chips, like Enjoy Life.
  • Nuts
  • Blueberries
  • Strawberries
  • Cherrys
  • Whipped coconut cream or soy topping

Directions

Combine all ingredients in a food processor, or if you don’t have a food processor you can use a blender) and process until fully combined.  Put in refrigerator for about 30 minutes to firm up if desired, or you can eat it up right away.  Top with your favorite toppings.  Makes six servings.  Store in the refrigerator.  Enjoy!
