I know that there are a lot of creamsicle smoothie recipes out there, but they either have yogurt or some other type of dairy ingredient, making them not dairy free or vegan. Since, I am no longer eating dairy I wanted to try a spin at making a smoothie version of one of my favorite childhood treats, a creamsicle.
I’m glad I tried making this smoothie, because it was fan-tas-tic! The addition of the high fiber dairy free coconut milk ice cream was the perfect ingredient that was needed to make this smoothie a perfect creamsicle creation. It would be delicious without the coconut milk ice cream, but not as creamy. And, that is the point of a creamsicle, to be creamy.
For those that are looking for a lower carbohydrate treat, I have a second option for you. The second option is delicious, but not quite as creamy. Either way my Creamsicle Smoothie is the perfect summer or spring time drink that is filling and healthy. When, you are in the mood to reminisce about those fun filled summers of your childhood, try whipping this quick and refreshing smoothie up.
Combine all ingredients in a blender and blend until smooth. Makes one serving. Enjoy!
