I scoured the internet for a healthy brownie batter bite and I couldn’t find any that I would consider healthy, that actually sounded like they would taste like a brownie.  They all either used brownie mix and butter, making them not healthy at all, or they were 80% dates.  Don’t get me wrong, dates are yummy, but I wanted something that truly tasted like brownie batter.

So, I figured out a way to make them myself.  I’m so glad I did, because Oh My Gosh!  They are rich and gooey, and they were exactly what I wanted.  They are only 111 calories each and only have 9.5 grams of carbohydrates.  Plus, they have 1.5 grams of fiber and 3 grams of protein.  Making them not only delicious but healthy too.  When, you compare them to other brownie bite pops, which have 186 calories and about 25 grams of carbohydrates per piece.  Mine are superior  And, those other brownie batter pops calories and carbohydrates are not the good kind either, they are mainly sugar and butter.

The coconut oil in my brownie batter bites is one of the healthiest oils on the planet as long as it’s extra virgin coconut oil, meaning not turned into trans fats.  Also, the coconut sugar is extremely lower in the glycemic scale compared to regular white or brown sugar.  Eating my Brownie Batter Bites you don’t have to feel guilty, unless you eat the whole batch.  Which honestly wouldn’t be that far fetched, since these are so outrageously good.  The next time you are craving some delicious brownie batter pops, whip up my Brownie Batter Bites in only 5 mins!

Ingredients

  • ½ cup or 2 scoops Chocolate Shaklee Life Energizing Shake mix (or for vegan option use Cocoa Energizing Soy Protein
  • ½ cup cocoa powder
  • ¼ cup coconut sugar (You can sub. brown sugar, but coconut sugar is much lower on the glycemic index.)
  • ¼ cup extra virgin coconut oil, melted
  • ½ tsp cinnamon
  • ¼ tsp salt, pink himalayan
  • 2 tbsp chocolate chips, optional (I used Enjoy Life to make them gluten and dairy free, and then they can be vegan too.)
  • 1 tsp liquid stevia (optional, for an even sweeter taste)
  • Optional to add chocolate chips or chopped nuts.

Directions

In a medium bowl combine protein mix, cocoa powder, coconut sugar, cinnamon and salt and stir.  Then, add in the melted coconut oil and stir to fully combine.  It will make a thick batter.  If you are adding in chocolate chips or nuts mix those in last just before rolling into bites/balls.  Roll spoonfuls into about 1 inch balls.  If you want you can roll them into the chocolate chips.  FYI, if you put them in the refrigerator they will get hard, they will still taste delicious, but not be soft and gooey.  I put half in the refrigerator so they would last longer, and then just warmed them for a few seconds in the microwave and they were so rich and gooey!  Makes ten bites.  Enjoy!
