Cashew Coconut Protein Bites

When I thought these up in my head, I had no idea that they would be sooo good!  After taking the first bite, my eyes rolled back in my head.  I love coconut, especially since it is so good for our bodies, as long as it is not loaded with sugar.

Then, you add in the perfect amount of dark chocolate and I’m done for.  But, the great news is that these bites are not bad for you.  They are only 60 calories a piece.  And, they only have 5.5 grams of carbohydrates.

So, when you are in need of a healthy dessert option, these decadent Cashew Coconut Protein Bites are a great choice.  Of course, the high quality protein powder that is used makes all the difference.  Try them out for yourself next time you need a sweet treat that is healthy too.

Directions

In a small bowl combine the cashew butter, honey and protein powder.  Then, add in the 2 tbsps coconut flakes.  Take spoonfuls and roll into about 2 inch balls.  Put the extra tbsp of coconut flakes on a plate and roll the balls in the coconut.  Then, microwave or on the stove top heat up the dark chocolate chips.  If using the microwave start with 1 minute at 50% power and add 30 secs until melted when stirred.  Make sure to not overheat or they will get hard from being burnt.  Once they are melted take small spoonfuls and drop a small amount on top, then sprinkle with the extra coconut that is left on the plate that they were rolled in.  Put in fridge to firm up for a few minutes or you can gobble them up right away like I did.  Makes about twevle bites.  Enjoy!
