I love peanut butter.  I love chocolate.  I love peanut butter and chocolate together!  I really love when peanut butter and dark chocolate chips are in a scrumptious bite sized snack that is healthy!  My PB Cookie Dough Energy Bites are exactly that.  They are so good it’s hard to stop at one, or two, or even three for that matter.  These delicious treats truly taste like peanut butter chocolate chip cookie dough.

The two main ingredients are peanut butter and protein powder, which gives these tasty bites staying power, they sure are filling.  One reason is all the protein that is packed into each one.   The healthy fats are another reason these delicious balls of yumminess are so filling.  Peanut butter and the protein, plus chia and flax seeds (optional) all have healthy fats.  Healthy fats are so good for our bodies to function properly.  With every snack I eat, I make sure to include a healthy protein and fat source, because I know how important it is and if I didn’t I’d be hungry again right away.

Another thing I just love about these PB Cookie Dough Energy Bites is that they are super fast and easy to make.  You can also change up the ingredients for a customizable snack.  Because, even though I love peanut butter, maybe you prefer almond butter with dried cranberries.  The options are almost endless.  Whip them up in a jiffy next time you need a tasty treat that is healthy!

Directions

If peanut butter is cold, it in a glass bowl microwave for 30 seconds, or you can place the bowl in a pot over the stove top and warm it that way.  Never microwave the peanut butter in a plastic container if that is the way it comes, warming anything in a plastic container releases toxins into the food.  Warming the peanut butter makes stirring it much easier.  Combine the wet ingredients.  Then, add in the dry ingredients, leaving the chocolate chips last and stir to combine.  Scoop spoonfuls and roll into 2 inch balls.  Makes twelve bites.  Enjoy!
