Apple Pecan Salad with Chia Seed-Yogurt Dressing

This salad is my new favorite autumn salad.  When apples are in season and oh so juicy!  Apples are one of my favorite fruits ever since childhood.  They are great in sweet dishes, savory dishes, spicy dishes, or on their own.  They have lots of fiber and the chia seeds in the dressing also have lots of fiber.  In addition, chia seeds are loaded with antioxidants, they are high in omega-3’s, they help reduce your bad LDL cholesterol, while raising the good HDL cholesterol, and the list goes on.

I have to say that the tastiness of a salad is often depicted by the dressing used.  However, a lot of salads don’t need any dressing, but I do love me some delicious dressing.  The dressing used for this salad is so easy to make with only four ingredients and tastes amazing!  It’s sweet and has a little bit of a tang.  Perfect for the fall season, or any time of year in that fact.

I am always making sure that whenever I eat a meal or snack, I include some healthy protein and fats.  This is where the pecans and chia seeds come in.  They also add an additional crunch, along with the crisp apples.  My apple pecan salad with chia seed dressing is screaming fall, but like I said you can enjoy it anytime of year.

Dressing Ingredients

  • 1/4 cup vanilla or plain light yogurt (I used vegan and dairy free yogurt like So Delicious)
  • 1 tsp honey (or maple syrup for a vegan option)
  • 1/2 tsp dijon mustard
  • 1 tsp chia seeds

Salad Ingredients

  • 3 small apples, cored and chopped (gala, fuji or honeycrisp work great.)
  • 3/4 cup chopped raw pecans
  • 3 cups spinach

Directions

Combine all dressing ingredients in a small bowl and set aside.  Divide salad ingredients into 3 separate bowls and evenly top the salads with the dressing.  Makes three servings.  Enjoy!
