When I baked this the house was filled with the most delicious smell of apples and spices.  I wasn’t really hunger until I smelled the yummy goodness.  I had had a craving for a delicious apple crisp for a while, but didn’t want to eat the kind that uses wheat flour or has a ton of sugar in it.

So, I altered a bunch of recipes, to find the perfect gluten free, dairy free, healthy apple crisp version.  My Apple Protein Crumble only has 169 calories per serving and 22 grams of carbohydrates, plus 5 grams of high quality protein.  Where other non-healthy apple crisps have a wooping 315 calories, which is almost two times the amount of calories as mine.

The carbohydrates in the non-healthy versions are 60 grams, that’s about triple compared to mine, and they only have 2.5 grams of protein, it’s not even the healthy kind either.  So, next time you want to warm up with a healthy apple crisp, try making my Apple Protein Crumble and top it off with some vanilla ice cream (coconut milk kind, preferably) and a little maple syrup, are you drooling yet?

Ingredients

  • 3 medium apples, peeled, cored and sliced
  • 1 cup gluten free oats
  • 2 scoops or ½ cup Vanilla Shaklee Life Energizing Shake mix (or for vegan option use Vanilla Energizing Soy Protein)
  • ¼ cup almond, cashew, peanut or sunflower seed butter
  • ¼ cup almond milk
  • 2 tbsp coconut sugar (or granulated stevia)
  • 2 tbsp maple syrup
  • 2 tbsp pecans
  • 3 tsp cinnamon
  • 1 tsp nutmeg
  • Coconut oil to coat pan

Directions

Preheat oven at 350 degrees.  Oil a 9 inch square glass pan with the coconut oil.  Combine the oats, protein powder, coconut sugar or stevia, cinnamon, nutmeg and and mix well.  Add in the milk to make a crumbly texture.  Then, in a microwave-safe bowl, heat the nut butter until melted, add in the maple syrup and apples slices.  Place the apples in the pan.  Then, sprinkle with the crumble mixture, making sure to cover the apples evenly.  Sprinkle with pecans.  Cover with tin foil and bake for about 35 minutes or until the apples are cooked soft.  Makes nine 3 inch servings.  Store in the refrigerator.  Enjoy!
