These are so addicting!  Right after I made these, I ate one and then a second and then later that night I shared a thrid with my 3 year old son, Xander.  He loved these too!  They were so easy to make too!   The best part is that they are made with healthy ingredients.  I love knowing exactly what’s in them, unlike other candies and sugary snack options on the supermarket shelves.

These Trail Mix Candie are the perfect combination of sweet and salty...and sweet.  They have a great crunch and a gooey center.  They taste like a not so healthy treat, but they are healthy.  Because, they have two grams of fiber, two and a half grams of protein and only eight and three-quarter grams of carbohydrates per piece.

Of course, everything is best enjoyed in moderation, and that includes these little treats.  Even though it’s super hard to eat just one or two.  But, since they are only 95 calories per piece and fifteen minutes or less to make, they are a great option for when you are craving something sweet and salty that is still in the healthy range.  Try a batch for yourself today!

Ingredients

  • ¼ cup peanuts, or other nuts or seeds (If it’s a large nut, it should be chopped)
  • ¼ cup dried berries, cherries or raisins (I used Organic Made in Nature, Super Berry Fusion, which has cranberries, raisins, tart cherries, blueberries & pepita seeds)
  • ¼ cup peanut butter, or other nut or seed butter
  • ⅓ cup chocolate chips (I used Enjoy Life to make these dairy free, and are a vegan option)
  • 1 tbsp Protein powder (I used Chocolate Shaklee Life Energizing Shake mix) (or for vegan option use Cocoa Energizing Soy Protein) or you could just dip them in cocoa powder.

Directions

Combine the nuts, dried berries and peanut butter.  Scoop small spoonfuls onto a plate lined with parchment paper or wax paper and put them into the freezer for about 3 minutes to let them get a little stiffer.  While those are in the freezer, take the chocolate chips and melt them in the microwave for 1 ½ minutes on 50% power and check to see if you can stir them into a small bowl of melted chocolate.  If not then keep heating them for 30 second each time at only 50% power.  The key is to not wait until they are melted and not in a chip form jut from the heating process.  It’s stirring them into a melted form to make sure they are not overheated, otherwise they will burn and taste icky.  Then, scoop a ½ spoonful of the chocolate and cover the top of each nugget making sure each has the same amount of chocolate, until all the chocolate is used.  Then, put them into the freezer for another 3 - 4  minutes or until the chocolate has hardened.  Then, put the tbsp of protein powder in a small bowl or low cup and dip the bottom of the nuggets in the protein powder, this keeps the candies from being sticky on the bottom.  Store in the refrigerator.  Makes eight candies.  Enjoy!
