When I made this smoothie, I wasn’t thinking about St. Patrick’s Day. I actually needed to use up the bananas before they went bad. So, I added the other produce we had in the refrigerator, which happened to be blueberries and spinach.
Most of the time I add spinach to my smoothies, usually it’s to make my Strawberry Fields Smoothie. I’m glad I ventured out and used the miscellaneous ingredients in my refrigerator to make a new smoothie. Because, boy was it good.
One thing I love about spinach is that one cup has only 7 calories, one gram of carbohydrates and one gram of protein. Plus, lots and lots of vitamins and minerals that our hard working bodies need. So, this St. Patrick’s Day whip up a Spotted Leprechaun Smoothie and fill up on high quality nutrients.
Combine all ingredients in a blender and blend until smooth. Makes one serving. Enjoy!
