Eggless Eggnog Smoothie

The first time I made this smoothie I tried it without the butter rum extract.  It was good, but didn’t taste like eggnog.  So, I went searching for something that would make the difference and I found it, butter rum extract.  Now, I understand not everyone will have the ability to find butter rum extract.  So, I figured out a few other options.

The first is rum extract, this is the second best option to the butter rum,  The second is butterscotch extract, just a little bit about ½ tsp would be fine.  Make sure to still use the vanilla extract too, this will also make a difference.

I am not a fan of drinking eggnog because the whole consuming raw eggs makes my tummy feel funny.  But, when something is flavored like it, without the raw egg or is baked, so any eggs are cooked.  Then, I’m all for it.  Around the holidays, there are lots of temptations, and I thought why not make a healthy version of one of the most often consumed drinks during the holidays.  My version of eggnog in smoothie form is filling, because it has lots of fiber.  Plus, it has lots of protein too, all while only being 210 calories.  Crazy, right?  Well, you’ll be glad I’m crazy enough to figure out a delicious Eggless Eggnog Smoothie, once you try it!

Directions

Combine all ingredients in a blender and blend until smooth.  You can warm this up too, to make it even richer, but I wouldn’t add the ice cubes.  I’d suggest to add in an additional half cup of milk, if you are going to have it warmed.  Makes one serving.  Enjoy!
