After making my Blueberry-Lemon Scone Smoothie and having it turn out so delicious, I thought to myself why not make Blueberry Lemon Protein Bites. So, I did. And, boy are they tasty! They remind me of a blueberry muffin all wrapped up in a round protein bite.
My three and a half year old thinks they are super tasty too. Which is great, because they are super healthy too. They have 2 grams of fiber and 3.5 grams of high quality protein per bite. Good thing, because growing boys need their protein and fiber to stay healthy and strong.
Another nice thing is that they are super fast to make, and are easy to grab and go for a quick snack. These are great in the morning for a fast out-the-door breakfast, or an afternoon or after school snack, or even as a delicious and nutritious dessert. Anytime of day is a good time to snack on these tasty bites. Try them for yourself.
Combine the wet ingredients. Then add in the dry ingredients except the blueberries, stir to combine. Then, add in the blueberries and stir. Scoops spoonfuls and roll into about 2 inch balls. Then, put in refrigerator for 10 - 15 minutes to let firm up. Makes about eight bites. Stor in therefrigerator. Enjoy!
