These are fantastic! I love pecans, they are the sweetest nuts on the planet and my favorite of all nuts. It’s dangerous having them in my house, because I will eat way more of them than I should in a sitting. They are just so addicting, what can I say.
That’s why I made these delicious Pecan Pie Protein Bites, so I can have my pecan fix, but keep it to a healthy serving. They are packed with healthy fats, complex carbohydrates and high quality protein and fiber to fill you up and give you lots of energy.
I made these using cashew butter, but I’m sure they will be scrumptious using almond, peanut or even sunflower seed butter. Now, if I could only find pecan butter...that would be way too dangerous though, nevermind. Try whipping up these tasty bites to get you in the autumn spirit.
Combine all wet ingredients in a small to medium bowl. Add in the dry ingredients, leaving the pecans for last. Stir to fully combine. Scoop out spoonfuls and roll into balls. Makes nine bites. Enjoy!
