I just love these bites!  They are the perfect fall snack, or anytime of year really.  Although, when autumn rolls around, which is my favorite season, I just love apple recipes.  This was a great idea, because I love protein bites so much.

These are easy and fast to make, my 4 year old helped whip these up in minutes.  He also helped me devour them too.  After, I made them I realized that even adding in some chopped pecans would be a tasty crunch.  I didn’t have any pecans at the time I made them, but next time I make them I will be adding in some.

These are great for on the go, or even for breakfast on busy school or work mornings, just grab a few and you’re on your way.  They have lots of healthy ingredients to give you energy for the day.  If you are looking for a healthy dessert or snack that embodies the delicious fall taste of apples, try my fall-tastic Cinnamon Apple Bites!

Ingredients

  • ½ cup or 2 scoops Vanilla Shaklee Life Energizing Shake mix (or for vegan option use Vanilla Energizing Soy Protein)
  • ½ cup gluten free oats
  • ¼ cup peanut, almond, cashew or sunflower seed butter
  • ¼ cup apple sauce
  • 2 tbsp dried apple slices, chopped or pulled apart into pieces
  • 1 tbsp maple syrup
  • ½ tsp cinnamon
  • ⅛ tsp nutmeg
  • optional add-in, 2 tbsp chopped pecans

Directions

Combine all dry ingredients, except the dried apples, and chopped pecans if using them, in a small to medium bowl.  Add in the wet ingredients, leaving the apples, and pecans for last. Stir to combine all ingredients.  Scoop out spoonfuls and roll into about 2 inch balls.  Makes ten bites.  Store in the refrigerator.  Enjoy!
