I just love these bites! They are the perfect fall snack, or anytime of year really. Although, when autumn rolls around, which is my favorite season, I just love apple recipes. This was a great idea, because I love protein bites so much.
These are easy and fast to make, my 4 year old helped whip these up in minutes. He also helped me devour them too. After, I made them I realized that even adding in some chopped pecans would be a tasty crunch. I didn’t have any pecans at the time I made them, but next time I make them I will be adding in some.
These are great for on the go, or even for breakfast on busy school or work mornings, just grab a few and you’re on your way. They have lots of healthy ingredients to give you energy for the day. Combine all dry ingredients, except the dried apples, and chopped pecans if using them, in a small to medium bowl. Add in the wet ingredients, leaving the apples, and pecans for last. Stir to combine all ingredients. Scoop out spoonfuls and roll into about 2 inch balls. Makes ten bites. Store in the refrigerator. Enjoy!
