I truly LOVE peanut butter, most days I have to have a little bit, or a lot.  I also Love chocolate, everyday I have at least a little bit of dark chocolate, unless I’m on a mini cleanse.  I also really like mochas.  So, I thought why not combine all of these delicious things and make a healthy smoothie.

I know pretty much everybody that has a blog with smoothies, has a peanut butter cup smoothie, but do they have a Mocha PB Cup Smoothie?  And, is it as healthy as mine, while tasting like a decadent dessert?  Probably not.  My smoothie has 9 grams of filling fiber!  And, over 24 grams of fueling protein from one hundred percent all natural and organic plant based protein.

My Mocha PB Cup Smoothie is great after a hard workout, because it has a lot of protein to replenish those hard worked muscles.  The quality carbohydrates and caffeine from the coffee, really give your body a boost of energy, but since you are eating so much healthy ingredients along with the coffee, and it’s only half a cup of coffee, you won’t feel a crash later.  Try my Mocha PB Cup Smoothie and see for yourself!

Ingredients

  • 2 scoops or ½ cup Chocolate Shaklee Life Energizing Shake mix (or for vegan option use Cocoa Energizing Soy Protein)
  • 1 cup coconut milk (or almond, cow, cashew, rice, soy or flax milk)
  • ½ cup cold brewed coffee or chilled coffee
  • 1 tbsp Santa Cruz Organic Peanut Powder (or PB2 or actual peanut butter)
  • 1 - 2 tbsp dark chocolate chips (I used Enjoy Life to make these dairy free, and are a vegan option)
  • 4-5 ice cubes

Directions

Combine all ingredients in a blender and blend until smooth.  Makes one serving.  Enjoy!
