Coconut Cream Pie Smoothie

I love coconut! I eat it right out of the bag, I’m not talking about the overly sweetened kind you find in the baking isle.  I’m talking abou the unsweetened natural kind, it’s just so yummy!  Coconut cream pie is not a very healthy dessert option, because of all the unhealthy fatty cream and the buttery crust.  Since, I love coconut so much I decided to make a smoothie inspired by coconut cream pie.  Of, course I made sure to keep it healthy and nutritious.

There are two ways to make my Coconut Cream Pie Smoothie, the recipe below uses coconut milk, which makes it nice and creamy.  You can substitute coconut water for the coconut milk, this will still taste fantastic, I’ve tried it this way,  The second option is with coconut milk, which is creamier.  The kind of coconut water I use is Coco Libre.  A slice of coconut cream pie has over 100 more calories, over twice as many carbs, and an extra 10 grams of fat compared to my smoothie.  The fat in a slice of pie is not all from healthy fats either, but my smoothie is full of only healthy fats.  My Coconut Cream Pie Smoothie also has lots more protein and fiber.

Unsweetened coconut is bursting with healthy goodness.  It has a bunch of minerals which include iron, selenium, sodium, calcium, magnesium and phosphorous.  Coconuts are high in vitamins C, E, B1, B3, B5 and B6.  They also have a good serving of fiber to help keep you fuller longer.  Coconuts also have properties that are antiviral and antibacterial for the body.  So, drink up and enjoy this delicious Coconut Cream Pie Smoothie!
