Today, I whipped this recipe up for the second time and thought why not make them into cute little pumpkins. Technically it’s still pumpkin season thru Thanksgiving. When I take an extra 30 seconds to make something look pretty or cute, it always puts a smile on my face before I eat it. And, when it’s as good as these, I get another smile on my face after too. These are a great afterschool snack when kids want a treat, but you want them to have something healthy. They are super quick to make, only five minutes. And, just darling.
These are sweet, salty, creamy and crunchy all-in-one. So, no matter what you are in the mood for these bites will hit the spot. By using a high quality protein powder or shake mix from Shaklee, these bites are packed with fiber, protein, vitamins, minerals, and lots of nutrients that everybody needs. Especially growing bodies. This protein mix has prebiotics and probiotics, which when you consume both the body is better able to absorb and use the benefits of the pre and probiotics.
Since, I’m not eating gluten or dairy anymore, I used a truly gluten free rice crisp cereal and vegan chocolate chips. But, feel free to use non vegan chocolate chips or rice krispies. Also, I happened to have trader joe’s crunchy salted peanut butter with flax and chia seeds, so instead of using peanut butter and adding in the flax and chia seeds, which I would have done. The peanut butter had them already in it, making it even easier and simple to make these. If you don’t have that peanut butter on hand or flax and chia seeds, it’s okay. Regular peanut butter would be fantastic tasting! And, if you don’t have the seeds then these won’t be quite as healthy, but still healthy and super good!
Make sure peanut butter is soft at room temperature, this will make it easier to mix. (If you don’t have time to wait, just warm it in the microwave for 30 seconds.) Combine the peanut butter, the seeds and the protein powder. Then, add in the crispies and the chocolate chips. This will make the batter pretty firm. Scoop spoonfuls and roll into about 2 inch balls. Top with 2 almond slices and a crispy, if desired. Makes eight servings. Enjoy!
