When it’s fall it’s hard not to think about all the delicious pumpkin flavored treats to make and devour. Pumpkin is a fantastic vegetable that adds a unique sweetness to desserts. When our minds are going crazy with pumpkin inspired desserts, one that is often not thought of is pumpkin cheesecake. Most people think of apple cheesecake for a fall dessert or they don’t even think about cheesecake at all.
Which is a shame, because my Pumpkin Cheesecake Smoothie is super yummy! Since pumpkin is a vegetable and there is pumpkin in the smoothie, you get another serving of vegetables for the day in a dessert flavored smoothie. Of course, pumpkin is high in fiber which is great, because who wants to drink a smoothie and be hungry in two hours or less? Not me.
The pumpkin is not the only ingredient that is bursting with fiber, the high quality protein powder mix has 6 grams of fiber all on its own. The combo of protein from the protein mix, 16 grams plus the protein from the pumpkin and cream cheese make this a super filling smoothie! So, when you’re hungry and craving something different that has pumpkin, try this fantastically satisfying smoothie!

1 sheet gluten free graham cracker
Combine all ingredients in a blender and blend until smooth. Makes one serving. Enjoy!
