
Lately, I’ve been on a pineapple kick. It’s just so tasty! Today I decided to add it to my smoothie, but not do what I usually do when I add pineapple to my smoothies. Which is add coconut flakes and make it a pina colada.

Don’t get me wrong pina coladas are delicious! But, today I was in the mood for something different. So, I added in blueberries and to my surprise it was super tasty. I added in a handful of spinach too. Which, I usually do in my smoothies, since it is so healthy and it blends very well.

Even, though this smoothie is screaming summer, it would be a great way to get you dreaming of the warm beaches of summer when it’s cold outside. I love switching things up, like having summer food in the winter and having holiday flavors in the summer. Give this smoothie a try both in the sunny summer months and in the cold months too.

Combine all ingredients in a blender and blend until smooth. Makes one serving. Enjoy!
